Brazilian pork skewers with lime & garlic

Grill juicy citrus pork kebabs for a tantalizing meal.
Ingredients:
  • Garlic cloves, crushed
  • 1.20 gm sea salt
  • 2 tsp ground coriander
  • 42.00 gm fresh lime juice
  • 1 tsp finely grated lime rind
  • 27.30 gm olive oil
  • 500g pork loin steaks, cut into 2cm pieces
  • 400g can red kidney beans, rinsed, drained
  • 250g punnet cherry tomatoes, halved
  • 4 shallots, trimmed, thinly sliced
  • 40.00 ml chopped fresh continental parsley
  • 2 tsp red wine vinegar
  • 2 red onions, halved, cut into wedges
  • Olive oil spray
Instructions:
  • Combine garlic, salt, coriander, lime juice, lime rind, and 1 tablespoon of oil in a mortar. Pound with a pestle until a smooth paste forms. Transfer the mixture to a glass or ceramic dish. Add pork and coat evenly. Cover with plastic wrap and marinate for 10 minutes.
  • In a bowl, combine the beans, tomato, shallot, parsley, vinegar, and remaining oil. Toss well to mix everything together. Season with salt and pepper to taste.
  • Skewer the pork and onion. Preheat a grill on high heat. Spray the skewers with oil. Grill for 6-8 minutes until charred and cooked through, turning occasionally. Serve with tomato salad.
