Brazilian shrimp stew with coconut milk, curry paste, tomatoes, and roasted red peppers for a flavorful and comforting meal.
Ingredients:
  • 2 tablespoons butter
  • 1 tablespoon grapeseed oil
  • 2 medium shallots, minced
  • 2 cloves garlic, minced
  • 1 tablespoon red curry paste
  • 1 (14.5 ounce) can diced tomatoes, drained
  • 1 cup coconut milk
  • 0.25 cup chopped roasted red bell pepper
  • 0.25 cup chopped cilantro
  • 1 tablespoon lime juice, or to taste
  • 1 teaspoon ground cayenne pepper
  • 1 teaspoon cornstarch
  • 1 pound uncooked medium shrimp, peeled and deveined
  • 2 cups cooked jasmine rice
Instructions:
  • In a large saucepan, melt butter and add oil. Saute shallots, garlic, and curry paste until fragrant and garlic is golden brown, for about 1 minute. Add tomatoes, coconut milk, roasted red bell pepper, and cilantro. Bring to a simmer.
  • Squeeze lime juice with a light hand, adjusting to your liking. Sprinkle in cayenne and salt, followed by cornstarch, stirring until thickened. Gently mix in shrimp and simmer until they turn pink and opaque, around 3 minutes.
  • Serve the flavorful stew alongside fragrant jasmine rice.
