Elevate your sandwiches and meats with sweet and crisp Lebanese cucumber pickles, a flavorful blend of vinegar and spices.
Ingredients:
  • 5 large Lebanese cucumbers, trimmed, cut into 5mm-thick slices
  • 2 small brown onions, halved, thinly sliced
  • 9.60 gm salt
  • 375ml (1 1/2 cups) apple cider vinegar
  • 215g (1 cup) caster sugar
  • 2 tsp mustard seeds
  • 2 tsp coriander seeds
  • Large pinch of ground turmeric
Instructions:
  • In a bowl, mix cucumber, onion, and salt. Cover and refrigerate overnight. Drain mixture in a colander, then pat dry with paper towel.
  • In a medium saucepan over medium heat, combine vinegar, sugar, mustard seeds, coriander seeds, and turmeric. Cook and stir for 3 minutes until the sugar dissolves. Then, add the cucumber mixture and bring it to a simmer.
  • Pour the mixture into sparkling, dry glass jars. Seal, flip upside down for 2 minutes, and let it sit for 1 day to enhance the flavors.
