Ingredients:
  • 1 1/2 teaspoons bread machine or quick active dry yeast
  • 4 cups lukewarm water (105°F to 115°F)
  • 3 cups Gold Medal™ All-Purpose Flour or Gold Medal™ Bread Flour
  • 4 teaspoons sugar
  • 1/2 cup water
  • 3 cups Gold Medal™ Bread Flour
  • 2 tablespoons sugar
  • 1 1/2 teaspoons salt
  • 1 teaspoon bread machine or quick active dry yeast
Instructions:
  • Prepare sourdough starter by dissolving 1 1/2 teaspoons yeast in warm water in a large glass bowl. Add 3 cups flour and 4 teaspoons sugar, then beat with an electric mixer on medium speed for about 1 minute until smooth. Cover loosely and leave at room temperature for about 1 week until the mixture is bubbly and has a sour aroma. Transfer to a 2-quart or larger nonmetal bowl, cover tightly, and refrigerate until ready to use.
  • For optimal results, ensure your sourdough starter is used weekly. If not, just mix in 1 teaspoon of sugar. After using the starter, refresh it by combining 3/4 cup all-purpose flour, 3/4 cup water, and 1 teaspoon sugar until smooth. Loosely cover the mixture and let it sit in a warm place for at least 1 day until it becomes bubbly. Finally, tightly cover the starter and store it in the refrigerator until it is needed. When ready to use, simply stir the cold starter, measure it, and allow it to reach room temperature before using (expect the starter to expand as it warms up).
  • Carefully measure 1 cup of sourdough starter and all remaining bread ingredients, following the order recommended by the bread machine manufacturer, and place them in the bread machine pan.
  • Choose the Basic/White cycle and opt for a Medium or Light crust color. Skip the delay cycle. Once done, take out the baked bread from the pan and let it cool on a rack. Total time may differ based on your appliance and the settings chosen.
