Breaded Zucchini Pizza Bites

Delicious gluten-free zucchini pizza bites make a perfect Italian appetizer.
Ingredients:
  • 1 (8 ounce) container small mozzarella balls
  • 4 medium Roma tomatoes
  • 3 tablespoons olive oil, divided
  • 1 clove garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 large egg
  • 1 tablespoon water
  • 0.5 cup Panko, bread crumbs
  • 2 medium zucchini, cut into 1/2-inch slices
  • 1 (6 ounce) package sliced pepperoni
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) for a perfect bake. Line a cookie sheet with foil. Slice mozzarella balls in half and get them ready for the delicious dish.
  • In a small pot, bring water to a boil. Quickly blanch tomatoes in the boiling water for 1 minute. Remove, cool slightly, and easily peel the skin using your hands as it should come off effortlessly.
  • In a small pot, warm 1 tablespoon of olive oil. Sauté garlic until fragrant, about 1 to 2 minutes. Add peeled tomatoes, basil, and oregano. Simmer and crush tomatoes with a spoon to make sauce. Allow it to simmer while you prep the zucchini.
  • Combine the egg and water in a small bowl until smooth. Place panko in a shallow bowl.
  • Coat zucchini pieces in the egg-water mixture and cover both sides with panko crumbs.
  • In a large skillet over medium heat, heat the rest of the olive oil. Saute the zucchini slices coated in panko until they turn golden brown, flipping occasionally, which should take around 5 minutes. Then, transfer them to the prepared cookie sheet.
  • Place a generous dollop of sauce and a savory pepperoni slice on each zucchini slice and crown with a piece of melty mozzarella.
  • Place the dish in the preheated oven for about 10 minutes until the mozzarella is perfectly melted. Serve promptly.
