Savory breakfast casserole with sausage, potatoes, eggs, and mushrooms - simply delicious!
Ingredients:
  • 1 (16 ounce) package ground pork breakfast sausage
  • 12 eggs
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1.25 cups milk
  • 1 (4.5 ounce) can sliced mushrooms, drained
  • 1 (32 ounce) package frozen potato rounds
  • 0.5 cup shredded Cheddar cheese
Instructions:
  • In a skillet over medium-high heat, cook the sausage until beautifully browned. Drain any excess fat and set aside.
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) while lightly greasing a 9x13 inch baking dish.
  • Combine eggs, condensed cream of mushroom soup, and milk in a large bowl. Add sausage and mushrooms, then pour mixture into the baking dish. Gently fold in frozen potato rounds.
  • Bake in a preheated oven for 45-50 minutes, then sprinkle with cheese and bake for an additional 10 minutes until cheese is melted.
