Satisfy morning hunger with easy and flavorful huevos rancheros topped with refried beans, tomato, avocado, and cheese.
Ingredients:
  • 2.5 tablespoons olive oil, divided
  • 0.5 cup chopped yellow onion
  • 0.25 cup chopped green bell pepper
  • 1 medium tomato, chopped
  • 1 clove garlic, minced
  • 0.5 teaspoon cayenne pepper
  • salt and ground black pepper to taste
  • 4 corn tortillas
  • 4 eggs
  • 1 (14 ounce) can refried beans, heated
  • 0.75 cup shredded Mexican cheese blend
  • 1 jalapeno pepper, chopped
  • 0.25 cup fresh cilantro leaves, or to taste
  • 0.5 avocado, sliced
Instructions:
  • In a pan over medium heat, heat half of the oil. Sauté onion and bell pepper until softened, about 5 minutes. Then, add tomato, garlic, cayenne pepper, salt, and pepper. Cook for an additional 2 minutes. Set aside the salsa.
  • In a pan, heat a drizzle of oil. Add tortillas individually, cooking for about 20 seconds each until heated through. Keep them warm.
  • In the same pan, heat the remaining oil over medium-high heat. Add eggs and cook to your liking, 4 to 6 minutes.
  • For each tortilla, coat with a thin layer of refried beans. Top with a spoonful of salsa and sprinkle on shredded cheese. Place a fried egg on top and add more cheese, chopped jalapeno, and cilantro. Serve right away with avocado, plus extra refried beans and cheese on the side.
