Spiced breakfast cake with chopped prunes for extra moisture. Childhood favorite for cake lovers who enjoy a sweet start to the day.
Ingredients:
  • 1 cup shortening
  • 2 cups white sugar
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 1.3333333730698 cups buttermilk
  • 1.3333333730698 cups stewed prunes, chopped
  • 2.3333332538605 cups all-purpose flour
  • 1 teaspoon allspice
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 cup chopped walnuts
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease and flour a 9-inch tube pan.
  • In a large bowl, use an electric mixer to blend the shortening and sugar until smooth. Add the eggs one at a time, then mix in the vanilla and prunes. In a separate bowl, sift together flour, allspice, nutmeg, cinnamon, salt, baking powder, and baking soda. Gradually stir in the dry ingredients, alternating with the buttermilk. If desired, fold in the walnuts. Transfer batter to the prepared pan.
  • Bake in the preheated oven for 50 minutes or until a toothpick inserted in the center comes out clean. Then, cool on a wire rack for at least 10 minutes before flipping onto a serving plate.
