Wholesome whole grain and prune breakfast muffins for a quick and energizing morning start.
Ingredients:
  • 1 cup sorghum flour
  • 2 teaspoons baking powder
  • 2 eggs, beaten
  • 1 cup dried pitted prunes, finely chopped
  • 1 cup lemonade
  • 1 cup water
  • 0.25 cup dry whole-grain hot breakfast cereal
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C) and give those 12 muffin cups a little love with some grease.
  • In a bowl, mix together all-purpose flour, sorghum flour, baking powder, baking soda, and salt. Keep it aside.
  • In a bowl, use an electric mixer to whip eggs until light and frothy. Combine prunes, sugar, lemonade, water, and cereal with beaten eggs; mix thoroughly. Gently fold in the flour mixture until just mixed. Fill muffin cups with the batter and bake.
  • Bake in the preheated oven for about 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Let the muffins cool completely in the cups before removing.
