Budget-friendly sausage and egg breakfast quesadillas perfect for family meals or on-the-go snacking!
Ingredients:
  • 1 pound bulk pork breakfast sausage (such as Jimmy Dean®)
  • cooking spray
  • 6 eggs
  • 0.25 cup milk
  • 0.5 pound shredded Cheddar cheese (such as Kraft®)
  • 0.25 cup butter
  • 24 flour tortillas, at room temperature
Instructions:
  • 1. Preheat a large skillet over medium-high heat. Brown and crumble sausage for 5 to 7 minutes. Discard excess grease and allow sausage to cool.
  • Heat a large skillet sprayed with cooking spray over medium-high heat. In a bowl, whisk together eggs and milk. Pour the mixture into the skillet and cook while stirring until the eggs are fully set, approximately 5 minutes. Allow to cool before serving.
  • Butter one side of each tortilla. Heat a skillet over medium heat. Place a tortilla, buttered-side down, in the skillet. Layer sausage, eggs, and cheese. Top with another tortilla, buttered-side up. Cook until golden brown on both sides, about 2 to 3 minutes per side. Transfer to a plate and repeat with remaining tortillas and filling.
  • Cut quesadillas into smaller, bite-sized quarters for convenient snacking and serve.
