Spicy pork sausage and nacho cheese breakfast quesadillas for a flavorful morning kickstart!
Ingredients:
  • 2 (4 ounce) links spicy pork breakfast sausage
  • 3 large eggs
  • 2 tablespoons milk
  • 3 tablespoons chopped green onions
  • 4 (6 inch) flour tortillas
  • 2 tablespoons nacho cheese sauce, or to taste
Instructions:
  • Heat a skillet sprayed with cooking spray over medium-low heat. Cook sausages, turning often, until browned and fully cooked, for 12 to 16 minutes or until a thermometer reads 160°F (70°C) when inserted into the center. Remove sausages from the skillet and chop once cooled.
  • Whisk eggs in a small bowl with milk.
  • Heat a small skillet with cooking spray over low heat. Pour in beaten eggs, green onions, salt, and pepper. Cook until edges are set, then scramble gently with a spatula for 3 to 5 minutes. Transfer the scrambled eggs to a plate and clean the skillet with a paper towel.
  • Start by laying down 1 tortilla in a skillet over low heat. Spread half of the nacho cheese sauce, half of the chopped sausage, and half of the scrambled eggs on top. Place another tortilla on top and cook until both sides are lightly browned, about 5 minutes in total. Transfer to a plate and repeat to make the second quesadilla.
