Whip up breakfast quesadillas by stuffing tortillas with scrambled eggs, beans, and cheese, then cooking to crispy perfection. Freeze extras for a convenient grab-and-go meal!
Ingredients:
  • 2 teaspoons butter
  • 1/4 cup chopped red onion
  • 6 large eggs, beaten in a bowl
  • 1/8 teaspoon salt, or to taste
  • Pinch black pepper
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 (4-ounce) can chopped mild green chiles, drained
  • 1/2 cup cilantro leaves
  • 6 (9-inch) flour tortillas
  • Pickled jalapeño peppers from a jar (optional)
  • 1 1/2 cups grated sharp cheddar or Monterey jack cheese, or more, to taste
  • Vegetable oil, to reheat the quesadillas
  • To serve:
  • Salsa
Instructions:
  • In a nonstick skillet over medium heat, melt the butter and sauté the onion briefly until softened. Add the eggs, salt, and pepper, stirring until they reach your desired consistency. Remove from heat and enjoy!
  • Combine the beans, mild green chiles, and cilantro with the eggs in the pan.
  • Prepare the quesadillas by adding 1/2 cup of filling on half of each tortilla. Add a few jalapeno slices (if desired) and 1/4 cup cheese. Fold over and press gently to flatten.
  • To cook the quesadillas, lightly oil a skillet and heat over medium. Cook for 1-2 minutes per side until cheese is melted and tortillas are golden and crispy. Enjoy them fresh or freeze the extras for later convenience.
  • To serve: Enjoy with salsa, if desired. FOR FREEZING: Line a baking sheet that fits in your freezer with parchment paper. Arrange assembled quesadillas on the sheet, layer with paper, add another layer, and cover loosely with plastic wrap. Freeze until firm, about 3 hours. Transfer frozen quesadillas to plastic freezer bags, interleaving with paper. Store for up to 2 months. TO REHEAT: Take desired number of quesadillas from freezer, place on a microwave-safe plate, and microwave for 2 minutes to partially defrost. If tortillas are soggy, follow "Cook the Quesadilla" steps in Step 4.
