Cheese Tacos

Cheesy tacos: Butter-fried corn tortillas filled with cheddar or Monterey Jack. A delicious twist on quesadillas.
Ingredients:
  • Corn tortillas (as many as tacos you want to make, packaged or homemade)
  • Butter
  • Cheddar or jack cheese
  • Salsa ( homemade or prepared)
  • Avocado
  • Apple
  • Lettuce
  • Strips of cooked chicken, beef, or pork (a great use of leftovers)
Instructions:
  • Preheat a cast iron pan over medium-high heat. As the pan heats up, slice cheese, grab salsa from the fridge, and slice apples thinly for tacos (3 tacos will need 3 apple slices). Cut, pit, slice, and peel avocado. Slice lettuce and any additional meat you'd like to include.
  • Spread a thin layer of butter on one side of the tortilla and place it in a hot pan, butter side down. Flip back and forth until both sides are buttered. Cook until bubbles form in the tortilla.
  • Place slices of cheese on one half of the tortilla, ensuring there is space for even melting without overflowing.
  • Fold the tortilla without cheese over the cheese side, resembling an omelette. Place the folded cheese taco to one side of the pan. Add another tortilla, with one side lightly buttered, and repeat the process. Test the taco's readiness by gently pressing down on it with a spoon or fork, indicating the cheese has melted, and it's ready to be removed from the pan.
  • After cooking the cheese tacos, it's time to customize them. Open each taco and add a slice of avocado, apple, chicken, and some lettuce for a perfect balance of flavors. Be mindful not to overfill the tacos for easy handling and enjoyment!
