Ingredients:
  • 2 thin-cut sirloin strip steaks (about 1/2 lb total)
  • Salt and pepper
  • 1/4 cup Bisquick Heart Smart® mix
  • 4 eggs
  • 4 oz crumbled blue cheese
  • 2 ripe avocados, pitted, peeled and sliced
Instructions:
  • Preheat a nonstick grill pan over medium-high heat. Season steaks with salt and pepper on both sides. Grill the steaks for 1-2 minutes per side until cooked to your liking. Let them rest for 10 minutes before slicing thinly.
  • Combine Bisquick Heart Smart® mix, milk, eggs, salt, and pepper in a large bowl and whisk until smooth.
  • Preheat omelet pan over medium heat. Pour in a quarter of the egg mixture and cook until the top is firm. Sprinkle half of the omelet with 1 oz blue cheese and a quarter of the steak slices. Carefully fold the other half over the filling using a spatula. Continue cooking for 1 to 2 minutes until the blue cheese melts beautifully.
  • Plate the omelet with the avocado slices. Serve immediately.
