Cheesy tacos with Cheddar filling, topped with creamy sauce for a delicious Mexican treat.
Ingredients:
  • 2 tablespoons unsalted butter
  • 1 large onion, chopped
  • 1 jalapeno pepper, seeded and chopped, or more to taste
  • 1 (14.5 ounce) can chicken broth
  • 2 tablespoons cornstarch
  • 4 cups shredded American cheese
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (4 ounce) can diced green chile peppers
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon cayenne pepper
  • 12 corn tortillas, warmed
  • 3 cups shredded Cheddar cheese
Instructions:
  • Preheat your oven to 350°F (175°C).
  • In a pot over medium-low heat, melt butter until sizzling. Sauté onion and jalapeno until onion turns translucent, approximately 5 minutes. Stir in garlic and cook until aromatic, around 30 seconds.
  • Combine chicken broth and cornstarch until smooth, then add to the onion mixture. Stir and cook until the broth thickens. Reduce heat and gradually stir in American cheese until melted and the sauce is smooth.
  • Combine diced tomatoes, green chile peppers, cumin, and cayenne pepper with cheese sauce in a pot kept over low heat. Set aside half of the cheese sauce for later use.
  • Sprinkle a generous amount of Cheddar cheese in the center of each tortilla and roll them up tightly. Arrange the rolled tortillas seam-side down in a baking dish and cover with aluminum foil.
  • Bake until cheese is melted, about 10-12 minutes. Then, uncover and drizzle half of the reserved cheese sauce over the tacos.
