Crispy, golden-brown cheese enhances these tacos with irresistible flavor.
Ingredients:
  • For the chipotle sauce
  • 1/2 cup mayonnaise
  • 2 tablespoons canned chipotle in adobo sauce, plus more as needed
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon kosher salt, plus more to taste
  • For the tacos
  • Nonstick cooking spray
  • 3 1/2 cups shredded Mexican cheese, divided
  • 6 (6-inch) corn or fajita-style flour tortillas
Instructions:
  • Create the dipping sauce: Combine mayo, chipotle, lime juice, and salt in a small bowl. Adjust seasoning with additional salt or chipotle in adobo sauce for more spice. Set aside.
  • Prepare delicious tacos by heating a large nonstick skillet over medium heat and lightly coating it with cooking spray. Once hot, sprinkle 1/3 cup cheese in a 6-inch circle. Lay a tortilla on top of the cheese circle, ensuring some cheese is still visible around the edges. Sprinkle 1/4 cup cheese on half of the tortilla. Cook until the cheese touching the skillet turns golden brown around the edges, about 2 minutes. Use a rubber spatula to gently lift the crispy cheese off the skillet and fold the bare half of the tortilla onto the cheesy half, pressing to adhere. Continue cooking until the cheese is completely melted and both sides are deep golden brown, about 2 minutes. Repeat steps for the remaining tacos.
  • Serve the burnt cheese tacos immediately with chipotle sauce for dipping. Enjoy them hot and crispy. Store any leftovers in an airtight container in the refrigerator for up to 5 days.
