"Indulge in Santiago Rivera's coveted cheesecake at La Vina cafe in San Sebastian before it's gone, a must-try treat in this food paradise."
Ingredients:
  • 600g cream cheese
  • 4 eggs
  • 275g caster sugar
  • 300ml double thick cream
  • 20.00 ml plain flour
Instructions:
  • Preheat the oven to 200°C. Prepare the 23cm springform cake pan by greasing and lining the base and sides with baking paper, ensuring the paper extends 2cm above the rim of the pan.
  • Use electric beaters to whip the cream cheese until it's smooth and creamy. Add the eggs one at a time, beating well after each addition. Slowly mix in the sugar, followed by the cream, then add the flour and beat until smooth.
  • Gently transfer the cheesecake batter into the pan and tap to remove air bubbles.
  • Bake for 50 minutes or until the top is a beautiful dark brown, the cake is perfectly set with a slight wobble in the center, and a skewer comes out clean when inserted. Let it cool completely in the pan before serving for the best taste. Enjoy within a few hours of baking for optimal freshness.
