Mini Basque cheesecakes with a rich, burnt appearance, flavored with Baileys Irish Cream. Silky, luxurious and ideal for entertaining.
Ingredients:
  • 500g cream cheese, softened
  • 225g (1 cup) caster sugar
  • 3 eggs
  • 80.00 ml Irish Cream liqueur, plus extra, to serve (optional)
  • 40.00 ml plain flour, plus extra, to dust
  • 300ml thickened cream
  • Whipped cream, to serve
Instructions:
  • Preheat your oven to 220°C/200°C fan forced. Grease a 6-hole 125ml (½ cup) capacity silicone cupcake pan with melted butter and dust lightly with plain flour.
  • In a large bowl, use electric beaters to whip the cream cheese and sugar until light and creamy. Mix in the eggs, Baileys, flour, and cream until well combined.
  • Fill each cupcake hole with a generous 80ml (1/3 cup) of cheesecake mixture. Bake until just set with a slight wobble in the center, about 20-25 minutes. Allow to cool for 5 minutes, then transfer to a wire rack to cool completely. Repeat with remaining batter.
  • Top the cheesecakes with a dollop of whipped cream and a generous drizzle of Baileys, if desired.
