Combining festive favorites like fruit cake, mince pies, and trifles, our modern twist on the classic Christmas dessert features layers of jelly, fruit cake, cherries, citrus curd, Baileys liqueur, Coles mini fruit mince pies, and flaked almonds. Prepare ahead as it needs 4 hours to chill. Don't miss our irresistible trifle cakes too!
Ingredients:
  • 2 x 85g pkt port wine jelly crystals
  • 625ml (2 1/2 cups) boiling water
  • 800g pkt Light Fruit Cake
  • 1 1/2 x 900g ctn French Vanilla Double Thick Custard
  • 680g jar Pitted Morello Cherries in Syrup, drained
  • 350g btl lemon curd
  • 20.00 ml finely grated orange rind
  • 600ml ctn thickened cream
  • 60ml (¼ cup) Irish Cream Liqueur
  • 4 Festive Mini Fruit Mince Pies
  • Flaked almonds, toasted, to decorate
  • Icing sugar mixture, to dust
Instructions:
  • In a heatproof bowl, combine jelly crystals with boiling water and whisk until dissolved. Let it cool for 10 minutes, then pour into a 20cm round 3.75L (15 cup) glass trifle bowl. Refrigerate for 2 hours to set.
  • Cut the fruit cake into 6 slices and then into 3 pieces crossways. Stand the pieces upright against the side of the trifle bowl. Use additional cake pieces to support the side pieces and form a flat layer on top of the jelly. Put 125ml (1/2 cup) custard in a sealable plastic bag, snip off a corner, and pipe the custard between the cake pieces next to the glass.
  • Set aside ¼ cup of cherries. Place half of the remaining cherries on top of the cake pieces in the center. Spread half of the remaining custard over the cherries and cake to cover them completely. Gently smooth the surface.
  • Mix the lemon curd and orange rind together, then spread around the edge of the custard layer and smooth it out. Add the remaining cherries in the center, pour the remaining custard on top, and ensure the surface is smooth. Chill in the fridge for 2 hours.
  • Beat the cream and Baileys with electric beaters until firm peaks form. Spoon it on top of the trifle, then layer with fruit mince pies, almonds, and reserved cherries.
