Transform leftover mince pies into a decadent cookies-and-cream ice cream treat.
Ingredients:
  • 1L good-quality vanilla ice cream
  • 9 mince pies (preferably without lids), plus extra to serve (optional)
  • Pedro Ximenez sherry (optional), to drizzle (see note)
Instructions:
  • Allow the ice cream to soften at room temperature. Blend with mince pies in a food processor until smooth.
  • Transfer the mixture back into a plastic container and freeze until firm for 2-3 hours. When you're ready to enjoy, scoop the ice cream into sundae glasses or small bowls. Serve with a drizzle of sherry and extra mince pies on the side, if desired.
