Irresistible mini pastry bites, like doughnuts, paired with creamy Baileys sauce.
Ingredients:
  • 100g (1/2 cup) caster sugar, plus 2 tbsp, extra
  • 2.50 gm ground cinnamon
  • 60g unsalted butter, chopped
  • 150g (1 cup) plain flour
  • 2.40 gm table salt
  • 2 eggs
  • Peanut oil, to deep-fry
  • 170g (2/3 cup) sour cream
  • 45g (1/4 cup, lightly packed) brown sugar
  • 40.00 ml Original Irish Cream liqueur
Instructions:
  • Prepare the dipping sauce by blending all the components in a petite serving dish. Seal with plastic wrap and chill in the refrigerator until needed.
  • Next, mix the caster sugar and cinnamon in a heatproof bowl.
  • In a saucepan over medium heat, combine butter, vanilla, extra caster sugar, and 250ml (1 cup) water. Cook until the butter has melted, stirring occasionally for about 3 minutes. Add flour and salt, then stir with a wooden spoon for 1 minute until the dough pulls away from the pan's sides. Transfer to a bowl and let it cool for 5 minutes before using.
  • Incorporate eggs into the butter mixture one at a time using electric beaters until well combined. Transfer the mixture into a large piping bag with a 1cm fluted nozzle attached.
  • Heat oil in a saucepan until it reaches 180°C. Pipe 2 1/2cm lengths of dough into the oil, then cook until golden brown, about 2-3 minutes. Drain churros on paper towel-lined plate and toss in cinnamon sugar. Repeat with remaining dough, and serve with dipping sauce.
