Quick Baileys Irish cream cheesecakes made with store-bought chocolate cake in 20 minutes.
Ingredients:
  • Melted butter, to grease
  • 1/2 x 400g pkt bought chocolate cake (Mills & Ware brand), icing removed
  • 125g cream cheese, at room temperature
  • 32.00 gm brown sugar
  • 1 egg
  • 40.00 ml Original Irish Cream liqueur
  • Cocoa powder, to serve
Instructions:
  • Preheat oven to 150°C. Lightly grease twelve 30ml (1 1/2 tablespoons-capacity) mini muffin pans by brushing them with melted butter.
  • Slice the cake into thin 5mm slices using a serrated knife. Cut out 12 discs from the cake using a 3.5cm round pastry cutter. Arrange the cake slices in the bases of the muffin pans.
  • Combine cream cheese and sugar using an electric beater until smooth. Mix in the egg until fully incorporated. Gently fold in the Baileys using a metal spoon. Divide and spoon the cream-cheese mixture into pans.
  • Bake in oven for 10 minutes until just set. Let it cool completely for 30 minutes. Dust with cocoa powder before serving.
