Delicious sausage breakfast cake with aromatic spices that fill your home as it bakes. Perfect for busy mornings, even the kids will love it!
Ingredients:
  • 1 cup raisins
  • 3 cups boiling water
  • 1 pound ground pork sausage
  • 1.5 cups white sugar
  • 1.5 cups brown sugar
  • 2 eggs, lightly beaten
  • 1 teaspoon ground ginger
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon baking soda
  • 1 cup cold coffee
  • 1 cup chopped walnuts
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C). Place the raisins in a bowl and pour boiling water over them. Let them soak for 5 to 10 minutes. Drain and pat the raisins dry with a cloth. Set them aside.
  • In a large, deep skillet, sear the sausage over medium-high heat until golden. Remove, crumble into small pieces, and set aside.
  • Combine sausage, white sugar, and brown sugar in a large bowl, stirring until well blended. Then, add eggs and beat until smooth.
  • Combine flour, ginger, baking powder, and pumpkin pie spice in a bowl. Mix baking soda with coffee. Alternate adding flour mixture and coffee to meat mixture, mixing well each time. Gently fold in raisins and walnuts. Pour batter into a greased and floured Bundt cake pan.
  • Bake in a preheated oven for 75-90 minutes until fully cooked. Let it cool in the pan for 15 minutes before transferring to a serving platter.
