Delicious spice cake infused with savory breakfast sausage, served with a side of aromatic coffee.
Ingredients:
  • 1 pound pork sausage
  • 1.5 cups packed brown sugar
  • 1.5 cups white sugar
  • 2 eggs, beaten
  • 3 cups sifted all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon pumpkin pie spice
  • 1 cup cold, strong, brewed coffee
  • 1 cup raisins
  • 1 cup chopped walnuts
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare a 9-inch Bundt pan by greasing and flouring it. Pour boiling water over the raisins, let them stand for 5 minutes, then drain well and pat dry with a cloth towel.
  • Combine savory sausage with a sweet blend of brown sugar and white sugar in a large bowl. Stir until fully mixed, then add eggs and beat until smooth.
  • Combine flour, ginger, baking powder, and pumpkin pie spice in a separate bowl by sifting them together.
  • Incorporate baking soda into coffee.
  • Alternate adding the flour mixture and coffee to the sausage mixture, beating well after each addition. Gently fold in the raisins and walnuts into the cake batter.
  • Grease and flour a 9-inch Bundt pan, then pour the batter in. Bake at 350 degrees F (175 degrees C) for 1 1/2 hours or until a toothpick inserted into the cake comes out clean. Allow the cake to cool in the pan for 15 minutes before turning it out onto a wire rack.
