Savory sage and Romano cheese pancake, perfect for any meal with sausage, bacon, and fried apples.
Ingredients:
  • 1 cup sifted all-purpose flour
  • 1 teaspoon white sugar
  • 2 egg yolks
  • 1 cup buttermilk
  • 3 tablespoons chopped fresh sage
  • 2 egg whites
  • 2 tablespoons vegetable oil
  • 0.5 cup grated Romano cheese
Instructions:
  • Combine flour, sugar, and salt in a medium bowl. Add egg yolks, buttermilk, and sage all at once. Let batter rest at room temperature for 30 minutes.
  • Using a clean bowl, whip egg whites with an electric mixer until they form stiff peaks. Gently fold the whipped egg whites into the sage batter.
  • In a large skillet set over medium-high heat, warm the oil. Spoon batter into the skillet to form small pancakes. Flip them once bubbles form and cook until golden on both sides. Repeat with the rest of the batter, adding more oil if necessary. Sprinkle warm pancakes with Romano cheese before serving.
