Pork loin medallion steaks & sage butter with golden sweet potato

Effortlessly delicious pork loin steak recipe, ideal for a quick midweek meal.
Ingredients:
  • 1.2kg golden sweet potato, peeled and cut into 3cm pieces
  • Olive oil spray
  • Salt & freshly ground black pepper
  • 4 pork loin medallion steaks (about 140g each)
  • 18.20 gm olive oil
  • 60g butter
  • 1 clove garlic, finely sliced lengthways
  • 20 fresh sage leaves
  • 80g baby spinach leaves
Instructions:
  • Preheat the oven to 200°C. Spread sweet potato wedges evenly on 2 baking trays. Coat them generously with olive oil spray, then sprinkle with salt and pepper. Bake for 45 minutes, or until the wedges are tender.
  • Season the pork steaks generously with salt and pepper. Heat olive oil in a heavy-based frypan until shimmering. Sear the pork steaks for 3-4 minutes on each side until beautifully golden and cooked through.
  • Cover the cooked dish with foil to let it rest. Then, add butter, garlic, and sage leaves to the pan. Stir over medium-low heat until the butter turns a rich nutty brown color and the sage leaves become crispy.
  • Take off the heat promptly. Divide spinach leaves and sweet potato among plates. Serve with the pork steaks and drizzle with sage butter.
