Ingredients:
  • 1 (2 pound) boneless pork loin roast, trimmed of fat
  • 4 cloves garlic, minced
  • 1 tablespoon salt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon white sugar
  • 1 teaspoon ground black pepper
  • 0.25 cup balsamic vinegar
  • 0.25 cup olive oil
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and line a baking sheet with aluminum foil for easy cleanup.
  • Slice the pork loin into uniform 1/2-inch medallions.
  • Sear pork medallions in a hot skillet until beautifully golden brown on both sides, about 2 minutes each. Transfer them to the baking sheet.
  • Combine minced garlic, a pinch of salt, tangy Dijon mustard, a hint of sugar, and a sprinkle of pepper in a bowl. Slowly whisk in rich balsamic vinegar and fruity olive oil. Drizzle the flavorful mixture over each medallion.
  • Bake medallions in the oven until cooked to medium doneness, about 20 minutes.
