Try delicious pork chops with smoky baked beans for an easy weeknight dinner.
Ingredients:
  • 9.20 gm olive oil
  • 1 brown onion, finely chopped
  • 125g chorizo
  • 1.25 gm smoked paprika
  • Pinch chilli flakes, optional
  • 1 tsp thyme leaves
  • 250ml chicken stock
  • 400g can borlotti beans, rinsed, drained
  • 400g can cannellini beans, rinsed, drained
  • 6.80 gm maple syrup
  • 250g cherry truss tomatoes, halved
  • 720g pork loin chop
  • Basil leaves, to serve
  • Crusty bread, to serve
  • Rocket leaves, to serve
Instructions:
  • In a large saucepan over medium heat, heat the oil until shimmering. Add the onion and chorizo, cooking and stirring for 5 minutes until the chorizo is golden and crispy. Then, add the garlic, paprika, chili, and thyme, cooking for 1 minute until fragrant.
  • Combine the stock, beans, and maple syrup in a pot and bring to a boil. Lower the heat and simmer for 10 minutes. Stir in the tomato and continue simmering for 15 minutes, or until the mixture thickens and the tomato collapses.
  • Preheat a lightly oiled barbecue grill or chargrill to medium-high. Season the pork chops and grill in batches for 3 minutes on each side, or until fully cooked.
  • Serve tender pork chops and savory baked beans on individual plates. Garnish the pork chops with fragrant basil leaves and accompany with fresh rocket.
