Summer blueberry zucchini bread with Almond Breeze almondmilk for a moist and tasty treat.
Ingredients:
  • 0.75 cup sugar
  • 0.5 cup Almond Breeze Hint of Honey or Vanilla almondmilk
  • 0.5 cup vegetable oil
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1.75 cups shredded zucchini, patted dry between paper towels
  • 1 cup fresh blueberries
Instructions:
  • Preheat your oven to a toasty 350 degrees F and generously coat a loaf pan with nonstick cooking spray.
  • In a large bowl, mix sugar, Almond Breeze, vegetable oil, and eggs until smooth. In another bowl, combine dry ingredients, then gently stir into the Almond Breeze mixture. Finally, gently fold in zucchini and blueberries.
  • Pour the batter into the pan and bake for one hour, or until a toothpick inserted in the center comes out clean. Allow the bread to cool in the pan for best results, then enjoy it the next day for optimal flavor and texture.
