Creamy Cheddar almondmilk sauce coats tender chicken, broccoli, and rice in a delightful one-pot meal.
Ingredients:
  • 2 tablespoons butter
  • 1.25 cups Almond Breeze Unsweetened Original almondmilk
  • 1 cup low-sodium chicken broth
  • 1 cup long-grain white rice
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic salt
  • 1 pound boneless, skinless chicken breasts, cut into 1/2-inch cubes
  • 1 cup chopped onion
  • 2 cups chopped fresh broccoli
  • 1.5 cups shredded sharp Cheddar cheese
  • freshly ground pepper to taste
Instructions:
  • In a large saucepan, gently simmer butter, 3/4 cup Almond Breeze almondmilk, broth, rice, and seasonings. Add chicken and onion on top. Cover and cook on low for 20 minutes.
  • Off the heat, swiftly add broccoli to the pot, cover, and allow to rest for 5 minutes.
  • Add the rest of the Almond Breeze almondmilk and gently fold in the cheese. Heat on low until the cheese is melted, making sure not to overcook. Season with pepper to taste.
