Elevate your Thanksgiving stuffing with brioche, sautéed mushrooms, crispy bacon, and fresh herbs.
Ingredients:
  • 1 (14-ounce) brioche loaf
  • 4 slices bacon
  • 4 tablespoons unsalted butter
  • 1 medium yellow onion, diced
  • 2 large stalks celery, diced
  • 8 ounces cremini mushrooms, sliced
  • 2 tablespoons fresh parsley, chopped and divided
  • 1 tablespoon fresh sage, chopped
  • 2 teaspoons fresh thyme leaves, chopped
  • 2 large eggs, lightly beaten
  • 1 1/2 to 2 1/2 cups low-sodium chicken broth
  • 1 teaspoon kosher salt, or to taste
Instructions:
  • Prepare the brioche croutons by cutting the brioche into 1-inch cubes and spreading them on a large baking sheet. Bake at 300°F until golden brown and dry to the touch, about 30 minutes. Let cool before increasing oven temperature to 375°F.
  • Prepare the bacon: Place bacon slices in a large cold skillet in a single layer. Cook over medium heat until crispy, flipping once, about 5 minutes per side. Transfer bacon to a paper towel-lined plate to cool. Roughly chop cooled bacon. If excess bacon grease is present, save about 2 tablespoons in the skillet. Discard the rest or save for later use. Return skillet to medium heat.
  • Sauté the vegetables in butter until onions are translucent around 5 minutes. Then add mushrooms and garlic, cooking until mushrooms are tender around 3 minutes. Turn off heat, toss in all herbs except for 1 teaspoon of parsley for garnish, and combine.
  • Prepare the stuffing: Grease a 2 to 2 1/2-quart or 9x9-inch baking dish. Combine toasted brioche, chopped bacon, cooked vegetables, eggs, 1 1/2 cups broth, and salt in a large bowl. Include any liquids from the skillet. Gently mix everything together. If needed, add more broth 1/4 cup at a time until the bread is hydrated without being too wet.
  • Transfer the stuffing mixture to the baking dish, cover tightly with foil, and bake until puffed and bubbly, approximately 25 minutes. Remove foil and continue baking until the top is golden brown, about 20 minutes more.
