Brioche cheesecake

Decadent dessert combining cheesecake and bread pudding.
Ingredients:
  • 250g cream cheese, at room temperature
  • 250g carton light sour cream
  • 70g (1/3 cup) caster sugar
  • 2 tsp vanilla bean paste
  • 125ml (1/2 cup) milk
  • 70g (1/2 cup) finely chopped pecans
  • 2.50 gm ground cinnamon
  • 400g brioche loaf, cut into 2cm-thick slices
  • 100g butter, at room temperature
  • 100g Nutella or other choc-hazelnut spread
  • Icing sugar, to serve
  • Double cream or ice-cream, to serve
  • 100g dark chocolate, finely chopped
  • 60ml (1/4 cup) maple syrup
  • 125ml (1/2 cup) pouring cream
Instructions:
  • Preheat the oven to 180C (160C fan forced). Prepare a 22cm round springform pan by lining the base with a double layer of parchment paper and foil, leaving an overhang. Lightly grease the sides of the pan before placing the base back in.
  • In a large bowl, use electric beaters to blend cream cheese, sour cream, and half of the caster sugar until smooth. Mix in the vanilla. Add eggs one at a time, beating well after each addition. Slowly incorporate milk while continuing to beat.
  • Mix the pecans, cinnamon, and the rest of the caster sugar in a small bowl.
  • Prepare a large baking tray by lining it with parchment paper. Place the brioche slices on the tray. Spread half of the butter and half of the Nutella on one side of the slices. Sprinkle half of the pecan mixture on top, pressing gently to adhere. Flip the slices over and spread the remaining butter and Nutella on the other side. Finish by sprinkling the remaining pecan mixture.
  • Cut each brioche slice diagonally in half and generously sprinkle with the leftover pecan mixture.
  • Place brioche slices, cut-side down in pan, then set pan on a large baking tray. Pour cheesecake mixture on top and let it soak for 10 minutes.
  • Bake for 50-60 minutes until the cheesecake is firm and the crust is golden. Allow to cool in the pan for 15-20 minutes.
  • In a microwave-safe bowl, mix together chocolate, syrup, and cream. Microwave on High for 1 minute, then stir until smooth.
  • Sprinkle with powdered sugar, cut into triangles, and generously drizzle with sauce. Enjoy with a dollop of cream or a scoop of ice cream.
