Indulge in decadent cheesecake French toast drizzled with strawberry sauce for a cozy weekend breakfast.
Ingredients:
  • 3 eggs
  • 64.38 gm milk
  • 126.25 gm pouring cream
  • 250g strawberries, hulled, coarsely chopped
  • 53.75 gm caster sugar
  • 200g brioche loaf
  • 30g unsalted butter, chopped
  • 125g spreadable cream cheese
Instructions:
  • In a bowl, mix cream cheese, 1 tablespoon of caster sugar, and one-third of the strawberries. Cut the brioche into 8 slices. Spread the mixture on half of the slices, leaving a 1cm border. Sandwich with the remaining brioche slices.
  • In a small saucepan, mix strawberries, water, and caster sugar. Cook over medium heat for 10 minutes until strawberries break down and create a sauce. Take off the heat and let it cool slightly.
  • Whisk eggs, milk, and cream together in a large bowl. Place brioche sandwiches in a shallow baking dish to fit in a single layer. Pour egg mixture over sandwiches and let soak for 2 minutes. Flip sandwiches and soak for another 2 minutes until fully absorbed.
  • In a large non-stick frying pan over medium heat, melt half of the butter until bubbling. Cook the sandwiches in 2 batches for 2-3 minutes on each side until golden brown. Keep them warm, then repeat with the remaining butter and sandwiches.
  • Cut the sandwiches into slices and plate with strawberry sauce, optionally dust with icing sugar.
