Indulge in a decadent British fish pie packed with cod, salmon, and shrimp in a creamy sauce, crowned with fluffy mashed potatoes.
Ingredients:
  • 1.5 pounds potatoes, peeled and cubed
  • 0.33333334326744 cup cubed butter
  • 3.3333332538605 tablespoons milk
  • 2 large eggs
  • 1 medium onion, peeled and diced
  • 1 teaspoon dry thyme leaves
  • 0.25 cup dry vermouth
  • 1 cup fish stock, or to taste
  • 1 cup milk
  • 0.25 cup half-and-half
  • 2 tablespoons chopped fresh parsley
  • 6 ounces salmon fillet, cut into bite-sized pieces
  • 9 ounces skinless cod, cut into bite-sized pieces
  • 5 ounces uncooked medium shrimp, peeled and deveined
  • 1 tablespoon lemon juice
  • 0.75 cup grated medium Cheddar cheese
Instructions:
  • In a large pot, simmer cubed potatoes in salted water until tender, about 15 minutes. Drain before serving.
  • Add potato cubes to the stand mixer bowl and blend on low speed while slowly incorporating cubed butter and milk. Once combined, add eggs and mix until mashed potatoes reach your preferred consistency. Be cautious not to overmix as this can result in sticky potatoes. Season with salt and pepper to taste.
  • Preheat the oven to 400°F (200°C) for the perfect cooking temperature.
  • While the potatoes are boiling, melt butter with olive oil in a large skillet over medium heat. Cook onion and thyme until onions are soft and browned, about 5 minutes. Deglaze with vermouth and cook until alcohol evaporates, about 2 minutes. Whisk in flour, then slowly pour in stock and milk, stirring constantly until it simmers. Let it simmer for 1 to 2 minutes until thickened. Adjust consistency with a bit more stock if needed. Season with salt and pepper, then stir in half-and-half and parsley before turning off the heat.
  • Arrange the salmon, cod pieces, and shrimp in a 2-quart baking dish. Season lightly with salt and pepper, then drizzle lemon juice over the seafood.
  • Drizzle the flavorful sauce over the seafood and delicately mix. Layer the seasoned potatoes on top, fluffing them with a fork, and generously sprinkle with savory Cheddar cheese.
  • Bake in a preheated oven for 10 minutes. Then, lower the heat to 350 degrees F (175 degrees C) and continue baking until the potatoes are golden, seafood is fully cooked, and the pie is hot and bubbling, for an additional 20 minutes.
  • Let the dish sit for 10 minutes after taking it out of the oven before serving.
