Broad bean dip with focaccia toasts

Indulge in creamy broad bean dip paired with crispy toast.
Ingredients:
  • 1 x 350g loaf focaccia (Bazaar brand)
  • 385g (2 1/2 cups) frozen broad beans
  • 90g (1/3 cup) extra-light sour cream
  • 18.20 gm olive oil
  • 10.60 gm fresh lemon juice
  • 1 garlic clove, crushed
  • Salt & freshly ground black pepper
Instructions:
  • Preheat the oven to 200°C. Carefully slice the focaccia into twelve 5mm-thick slices using a serrated knife. Place slices on 2 baking trays and bake in the preheated oven for 10 minutes until crisp.
  • While the beans are cooking, blanch them in a small saucepan of boiling salted water for 1-2 minutes. Quickly cool them in cold running water, then peel off the skins.
  • Combine broad beans, sour cream, oil, lemon juice, and garlic in a food processor. Blend until creamy. Season with salt and pepper to taste. Serve with focaccia toasts.
