Broad bean dip

Elevate your appetizer with gourmet grissini, crostini, or vibrant veggie crudites for dipping.
Ingredients:
  • 600g frozen broad beans
  • 60ml (1/4 cup) olive oil
  • 1 brown onion, chopped
  • 185ml (3/4 cup) water
  • 90g (1/3 cup) natural yoghurt
  • 13.25 gm fresh lemon juice
  • 10.00 gm caster sugar
  • 62.50 ml chopped fresh mint
Instructions:
  • Place frozen broad beans in hot water to thaw for 4 minutes. Remove and discard skins. In a saucepan over medium heat, heat olive oil. Sauté onion for 5 minutes until soft. Add broad beans and water, bring to a simmer. Cook covered for 5 more minutes until beans are tender. Allow to cool, then transfer to a food processor. Blend with natural yoghurt, lemon juice, and sugar until smooth. Fold in fresh mint.
