Fresh mint and avocado dip with broad beans is a crowd-pleasing party appetizer, perfect for pairing with crunchy veggies.
Ingredients:
  • 500.00 ml frozen broad beans
  • 60.00 gm smooth ricotta
  • 62.50 ml finely grated parmesan
  • 1 avocado, roughly chopped
  • 40.00 ml roughly chopped fresh mint leaves
  • 42.00 gm lemon juice
  • 2.40 gm sea salt
Instructions:
  • Prepare broad beans according to the package instructions. Ensure thorough draining, then delicately peel off and discard the skins. Allow the beans to cool completely before using.
  • Combine broad beans, ricotta, parmesan, avocado, mint, lemon juice, and salt in a food processor or blender. Add pepper to taste and blend until smooth. Serve and enjoy!
