Grapefruit, broad bean and rocket salad

This vibrant salad combines refreshing grapefruit, creamy avocado, savory prosciutto, and crunchy roasted pecans for a quick and flavorful meal. Ready in just 30 minutes!
Ingredients:
  • 82.50 ml pecans, roughly chopped
  • 36.40 gm extra virgin olive oil
  • 20.00 ml white wine vinegar
  • 120g baby rocket
  • 4 ruby red grapefruit, peeled, segmented
  • 500.00 ml frozen broad beans, thawed, peeled
  • 1 large avocado, sliced
  • 4 prosciutto slices, torn
Instructions:
  • Preheat the oven to 180C (160C fan-forced) and line a baking tray with parchment paper.
  • Spread pecans onto a baking tray lined with parchment paper. Generously drizzle honey over the pecans and mix well to ensure they are evenly coated. Bake in the oven for 8 to 10 minutes, or until they turn a beautiful golden color. Allow them to cool before using in the recipe.
  • Combine oil, vinegar, salt, and pepper in a small bowl. Mix well. Arrange rocket on a serving plate. Top with grapefruit, beans, avocado, and prosciutto. Drizzle with dressing and sprinkle with pecans before serving.
