Cheesy broccoli and pepperoni calzone - a delicious twist on classic pizza flavors.
Ingredients:
  • 2.25 teaspoons active dry yeast
  • 1.5 cups warm water (110 degrees F/45 degrees C)
  • 4 cups all-purpose flour
  • 1.5 teaspoons white sugar
  • 1 tablespoon olive oil
  • 1.5 heads fresh broccoli
  • 0.66666668653488 cup shredded provolone cheese
  • 0.33333334326744 cup shredded mozzarella cheese
  • 0.25 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • 1 cup diced pepperoni
  • 1 egg, beaten
  • 1 tablespoon water
  • 2 tablespoons cornmeal
Instructions:
  • Proof the yeast by gently blending it with a 1/4 cup of warm water in a large bowl. Allow it to rest until it becomes frothy.
  • Combine flour, salt, and sugar in a large bowl. Mix in one tablespoon of olive oil by rubbing it between your palms. Make a well in the dry ingredients, then add the proofed yeast mixture and mix by hand. Slowly incorporate the remaining warm water until a ball forms.
  • Drizzle a teaspoon of olive oil on a wooden board. Knead dough until smooth. Transfer dough to a greased bowl, cover with plastic wrap and a towel, and allow to rise in a warm place for 1 1/2 hours or until doubled in size.
  • For the calzone filling, start by cutting the broccoli tops from the stalks, then soak them in cool water with 1 teaspoon of salt for 15 minutes. Rinse them in fresh cool water, then boil for 5 minutes. Drain, chop into small pieces, and mix in a large bowl with provolone cheese, mozzarella cheese, Parmesan cheese, garlic, pepperoni, olive oil, salt, and ground black pepper.
  • Flatten and knead the dough briefly before dividing it into six equal portions. Roll each piece into an 8x10 inch rectangle on a floured surface.
  • Combine beaten egg and water in a small bowl. Spread 2/3 cup filling in a strip along one long side of the dough, leaving a one-inch border. Flatten filling with a spoon. Brush edges of dough with egg mixture. Fold dough over filling, tucking edges under by 1/4 inch to seal.
  • Prepare the baking pans by dusting them with cornmeal. Arrange three calzones on each pan. Brush the remaining egg mixture over the tops of the calzones. Use a toothpick to make holes 1/2 inch apart on the dough tops.
  • Preheat your oven to 375 degrees F (190 degrees C), then bake for 30 minutes or until golden brown. Enjoy hot or cold.
