Veggie tot waffles: fun, delicious, and a tasty way to get your veggies in!
Ingredients:
  • 2 (14 ounce) packages Green Giant® Veggie Tots Broccoli & Cheese, thawed
  • 8 slices cooked bacon (about 10 ounces)
  • 1 tablespoon Thinly sliced scallions for garnish
  • 1 teaspoon Hot sauce
Instructions:
  • Preheat the oven to a cozy 200 degrees Fahrenheit (95 degrees Celsius).
  • Preheat a 6- to 7-inch waffle iron over medium-high heat and generously spray with cooking spray. Once hot, place the Veggie Tots snugly together on the iron. Close the lid and press down firmly. Cook for 5 minutes.
  • Transfer the waffle to a wire rack set over a sheet tray to keep warm in the oven. Repeat the process to make another waffle.
  • In a nonstick skillet over medium heat, crack eggs and cook until edges are opaque, approximately 1 minute. Cover, reduce heat to low, and continue cooking until whites are fully set, about 4 minutes.
  • Slice the waffles in half. Top each half with 2 slices of bacon and 1 fried egg. Garnish with scallions and hot sauce to taste.
