Feta, spiced chickpeas, and tomato fill a quick and healthy quesadilla. Ready in 10 minutes!
Ingredients:
  • 70g broccoli, cut into florets
  • 70g can Snack Time Chick Peas with Zesty Vinaigrette, undrained
  • 20g feta, crumbled
  • 1 small vine ripened tomato, finely chopped
  • 1 x 42g Simson’s Pantry Lite Low Carb Super Grains wrap
  • 20g baby spinach
Instructions:
  • Steam the broccoli until vibrant green and al dente, for about 3-4 minutes. Drain thoroughly, then roughly chop the broccoli.
  • In a small bowl, gently mash the chickpeas with a fork to maintain some texture. In another small bowl, mix together the broccoli, feta, and tomato. Season to taste.
  • Spread the chickpeas evenly on one side of the wrap, then add the broccoli mixture and spinach. Fold the wrap over to cover the filling completely. Toast the wrap in a sandwich press until golden brown.
