Whip up these tasty vegetarian fritters in just 25 minutes for a wallet-friendly and healthy dinner choice.
Ingredients:
  • 200g broccoli florets
  • 2 garlic cloves, peeled
  • 3 green shallots, chopped
  • 125.00 ml fresh mint leaves
  • 150g (1 cup) frozen peas, thawed
  • 400g can chickpeas, rinsed, drained
  • 20.00 gm gluten-free cornflour
  • 2 eggs
  • 60g baby spinach
  • 2 Lebanese cucumbers, peeled into ribbons
  • 1 avocado, cut into wedges
  • 250g tub Cottage Cheese
  • Lemon halves, to serve
Instructions:
  • Combine broccoli, garlic, shallot, and mint in a food processor; pulse until finely chopped. Add peas and chickpeas; pulse until coarsely mashed. Transfer mixture to a bowl, then mix in cornflour, eggs, and season well until just combined using a spoon.
  • In a large non-stick frying pan over medium heat, warm 2 tsp of oil. Pour 1/4-cupfuls of batter into the pan and cook for 2-3 minutes on each side until perfectly golden and cooked. Place on a plate lined with paper towel. Repeat with the remaining oil and batter.
  • Plate the fritters alongside spinach, cucumber, avocado, cottage cheese, and lemon halves for a beautiful presentation.
