Hungover noodles

Delicious and comforting noodle dish with a zesty dressing, hot vegetables, and a fried egg. Perfect for a quick pick-me-up. Flex the ingredients based on what you have.
Ingredients:
  • 5 cm piece of ginger
  • 1 clove of garlic
  • 2 tablespoons low-salt soy sauce
  • 3 tablespoons rice wine vinegar
  • 3 tablespoons sesame oil
  • 1 Chinese cabbage
  • 500 g fresh or frozen broccoli
  • 250 g medium egg noodles
  • 200 g mangetout
  • 4 large free-range eggs
  • olive oil
  • hot chilli sauce to serve
Instructions:
  • Peel and finely grate the ginger and garlic into a large bowl. Add soy sauce, vinegar, sesame oil, and a pinch of black pepper. Mix to create a dressing. Boil the cabbage, broccoli, noodles, and mangetout for 3 minutes. Drain well and toss in the dressing. Cook eggs in a non-stick pan with olive oil until desired doneness. Serve noodles in bowls, topped with eggs, and drizzle with chili sauce for an added kick.
