Cozy up with a delicious veggie-packed pea, potato, and broccoli soup to stay warm and healthy this winter.
Ingredients:
  • 2 garlic cloves, crushed
  • 1 brushed potato, peeled, chopped
  • 1l chicken stock
  • 1 head broccoli, cut into florets
  • 240g pea
  • 80ml cream
  • Thin cream, extra, to serve
  • Coarsely chopped chives, to serve
  • Pastry stars, to serve (see notes)
Instructions:
  • In a large saucepan over medium heat, warm the oil. Sauté the onion, stirring occasionally, until softened, about 5 minutes. Stir in the garlic and cook until fragrant, about 1 minute.
  • Combine diced potato and flavorful stock in a pot and bring to a lively boil. Simmer for 10 minutes until the potato is tender. Introduce broccoli and peas to the pot. Bring back to a boil and cook for an additional 2 minutes until the broccoli is tender. Remove from the heat and enjoy!
  • Blend the mixture until smooth using a stick blender. Stir in the cream to combine and season to taste.
  • Divide the soup evenly into bowls. Drizzle with a bit more cream and sprinkle with chives before serving.
