Broccoli rice tots with bacon and ranch - a delicious twist on a classic kid-friendly snack.
Ingredients:
  • 1 (12 ounce) bag broccoli florets
  • 2 teaspoons sea salt, divided
  • 0.75 cup finely shredded Cheddar cheese
  • 0.5 cup panko bread crumbs
  • 0.33333334326744 cup minced onion
  • 3 slices cooked bacon, finely chopped
  • 2 tablespoons ranch dressing mix
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons olive oil, or to taste
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and prepare a baking sheet by lining it with parchment paper.
  • Pulse half of the broccoli florets in a food processor about 20 times until they resemble grains of rice, then do the same with the remaining florets.
  • Fill a large, shallow saucepan with 1/2 inch of water and stir in 1 teaspoon of salt. Bring to a boil, then lower the heat and stir in the broccoli rice. Cover and gently simmer until tender, approximately 5 minutes. Drain and cool for about 10 minutes before using.
  • Place the broccoli rice in the center of a clean dish towel. Squeeze and twist the towel to remove excess moisture.
  • Combine the vibrant Cheddar cheese, crunchy bread crumbs, aromatic onion, flavorful bacon, herbaceous parsley, rich ranch dressing mix, and binding egg in a large bowl. Fold in the broccoli rice until the mixture easily forms into a cohesive ball.
  • Using a small ice cream scoop, portion out 1 1/2 tablespoons of the mixture. Shape it into a ball and then press it into a tot shape using oiled hands. Place it on the prepared baking sheet and repeat with the rest of the mixture.
  • Coat broccoli tots with a luxurious drizzle of olive oil and generously sprinkle with the remaining 1 teaspoon of salt.
  • Roast in the oven until beautifully golden, turning halfway through, for around 24 minutes.
