Mini broccoli and cheese egg bites - perfect for brunch, parties, or kid-friendly meals.
Ingredients:
  • 1 large bunch of broccoli florets
  • 2 eggs, lightly beaten
  • 1/2 cup, packed, torn fresh bread (no crust)
  • 1/4 cup grated onion
  • 1/4 cup mayonnaise
  • 1 cup (4 ounces, 114 g), packed, grated sharp cheddar cheese
  • 1 1/2 teaspoons lemon zest
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
Instructions:
  • Preheat your oven to 350°F.
  • Prepare the broccoli: Steam the broccoli in a pot with water for 5 minutes until tender. Rinse with cold water and finely chop. You should have about 2 1/2 cups.
  • Prepare the filling by combining beaten eggs and torn bread in a large bowl until bread is fully moistened. Mix in grated onion, mayonnaise, cheese, lemon zest, salt, and pepper, then fold in minced broccoli.
  • Prepare the broccoli mixture: Grease 2 mini muffin pans (12 wells each) with non-stick spray, preferably non-stick mini muffin pans. Spoon the broccoli mixture into each muffin well.
  • Bake at 350°F for 25 minutes until golden brown and fully cooked.
