Healthy twist on a cheesy bake with brown rice and broccoli, perfect for guilt-free indulgence. Kid-friendly with crispy bacon and cheesy goodness.
Ingredients:
  • 4 rashers streaky bacon, chopped
  • 2 x 300g heads broccoli
  • 40g butter
  • 1 brown onion, finely chopped
  • 50g (1/3 cup) plain flour
  • 500ml (2 cups) milk
  • 200g tasty cheddar cheese, grated
  • 1 egg, lightly whisked
  • 2 x 250g packets microwave brown rice
  • 55g (1/2 cup) shredded mozzarella
Instructions:
  • Preheat the oven to 180C/160C fan forced. Cook the bacon in a small non-stick frying pan over medium heat until golden brown, about 3-4 minutes. Transfer the crispy bacon to a plate, leaving the flavorful bacon fat in the pan.
  • While waiting, heat a large saucepan of water until it boils. Prepare the broccoli by removing and trimming the stems. Slice the stems lengthwise and thinly. Separate the tops into small florets. Add all the broccoli to the boiling water, cover, and bring back to a boil over high heat. Let it cook for 1 minute. Drain and rinse under cold water, then drain well.
  • In the same saucepan over medium heat, melt the butter and add the reserved bacon fat. Cook the onion until softened, about 5 minutes. Sprinkle in the flour and cook for 1 minute. Gradually add the milk in four batches, stirring until smooth after each addition. Simmer, then reduce heat to medium-low and cook for 2 minutes. Remove from heat and stir in 2 cups of cheddar cheese. Add the egg, season generously, and combine well.
  • Make rice following the instructions on the packet. Transfer to a large bowl. Mix in broccoli and bacon. Pour cheese sauce over the mixture and gently fold until well mixed. Transfer to a 6-cup ovenproof dish. Combine remaining tasty cheese with mozzarella and sprinkle over the top. Bake for 25 minutes until golden brown and heated through. Let it cool for 5 minutes before serving.
