Broccoli Cheese Soup

Quick and creamy broccoli soup with three cheese sauce, perfect for a light lunch or dinner in just 25 minutes.
Ingredients:
  • 1 bag (24 oz) frozen broccoli & three cheese sauce
  • 3/4 cup vegetable broth
  • 1/4 teaspoon freshly ground pepper
  • 1 can (12 oz) evaporated fat-free milk
  • 1/3 cup shredded reduced-fat sharp Cheddar cheese
Instructions:
  • In a 3-quart saucepan, combine broccoli, cheese sauce chips, broth, pepper, and milk. Bring to a boil over medium heat, stirring occasionally. Reduce heat, cover, and simmer for 10 minutes until the broccoli is crisp-tender and the cheese is melted. Allow it to cool slightly before serving.
  • Blend half of the broccoli mixture in a blender until smooth. Pour into a bowl. Repeat with the rest of the broccoli mixture. Heat the pureed broccoli in a saucepan until hot. Serve topped with cheese.
