Broccoli quinoa nuggets

Savory baked broccoli quinoa bites paired perfectly with tangy tomato chutney.
Ingredients:
  • 200g broccoli florets
  • 80g (1/2 cup) cooked quinoa
  • 55g (1/2 cup) quinoa flakes
  • 60g grated haloumi
  • 2 green shallots, trimmed, chopped
  • Tomato chutney, to serve (optional)
Instructions:
  • 1. Preheat your oven to 200C (180C fan forced) and line a large baking tray with parchment paper. 2. Place broccoli in a heatproof bowl and pour boiling water over it. Allow it to blanch for 1 minute. 3. Drain broccoli and rinse under cold water. Squeeze out any excess water before using.
  • Finely chop broccoli in a food processor. Mix with cooked quinoa, quinoa flakes, haloumi, shallot, and egg. Pulse until combined. Season. Shape into oval patties using tablespoons and place on a baking tray. Spray with oil. Bake for 15 minutes until golden. Serve hot with tomato chutney, if desired.
