Cheesy broccoli quinoa - a delicious classic combo!
Ingredients:
  • 1 cup quinoa
  • 1 cup shredded Cheddar cheese
  • 2 cups chopped broccoli
  • 1.75 cups vegetable broth
Instructions:
  • In a saucepan, bring broccoli, broth, and quinoa to a boil. Cover, simmer on medium-low heat until broth is absorbed and quinoa is tender, 15 to 20 minutes.
  • Mix the sharp Cheddar cheese into the fluffy quinoa, cover it, and let it sit until the cheese is gooey and melty, about 2 to 3 minutes. Then, add a pinch of salt and a grind of black pepper for a burst of flavor.
